Rapoko (finger millet / Eleusine coracana) is one of Zimbabwe's oldest cultivated grains grown long before commercial maize arrived. At Keynshamburg Farm in Gweru it is grown in the red Midlands soil, harvested, stone-milled and packed without bleaching or additives. The distinctive dark colour and earthy, slightly sweet flavour comes from the bran which is retained in the milling process. Commercial roller mills strip this out. We do not.

  • 750ml water

Method

  1. Bring water to the boil in a heavy pot.
  2. Whisk in Finger Millet meal gradually, stirring constantly to avoid lumps.
  3. Reduce heat to medium. Stir continuously for 10–12 minutes until sadza is thick and pulls cleanly from the pot.
  4. Cover and rest 3 minutes before serving.
Serve with Mufushwa weCovo and slow-cooked mazondo or oxtail. Finger Millet sadza holds its shape beautifully alongside wet relishes.

Sorghum (mapfunde in Shona ,amabele in Ndebele) has been grown across the Zimbabwe Midlands for centuries as a drought-resilient staple. In Kezi rural areas it is grown without irrigation, developing a concentrated flavour that commercial varieties lack. Stone-milled with the bran intact — no bleaching, no additives. The result is a mealie meal that makes a lighter sadza than Finger Millet but with far more character than white maize meal(Available in white and Red varieties).

Pearl millet (mhunga) grows on Bonanza Farm in Karoi, Mashonaland West where the deep, well-watered soils of this region produce grain with exceptional mineral density. Mhunga was the staple grain of Zimbabwe's drier regions long before maize became dominant. Stone-milled and packed immediately after milling to preserve the natural oils in the bran.

Grown on Bonanza Farm in Karoi and stone-milled whole — bran, germ and endosperm all retained. This is not refined white flour. It is wheat as it was always eaten before industrial milling stripped away everything nutritious. Zimbabwe's Lowveld — the hot, flat basin around Chiredzi in Masvingo province — has grown rice under irrigation since the 1960s. The intense heat and long growing season produce a long-grain rice with a slightly floral fragrance and a firm, separate texture when cooked. This is not Thai rice, not Indian basmati, not Chinese jasmine. It is Zimbabwean. Grown in Zimbabwean soil, under a Zimbabwean sun, by Zimbabwean farmers. Packed without washing or processing, preserving the natural surface starch that gives it its character.

  • Pinch of salt, small knob of butter (optional)

Method

  1. Rinse rice once in cold water. Do not over-rinse — the surface starch gives it character.
  2. Combine rice, water and salt in a pot. Bring to the boil uncovered.
  3. Reduce to lowest heat, cover tightly, cook 12 minutes without lifting the lid.
  4. Remove from heat, rest covered 5 minutes. Fluff with a fork.
Serve with Mufushwa weNyevhe and grilled beef or chicken. Also excellent with mopane worms cooked in a tomato and onion sauce.

What is the difference between Finger Millet, sorghum and pearl millet?

All three are ancient African grains grown in Zimbabwe long before white maize became dominant. Rapoko (finger millet) has the highest calcium of any grain and a dark, nutty flavour. Sorghum (mapfunde) is lighter, naturally gluten-free and very high in antioxidants. Pearl millet (mhunga) has the highest protein of the three and exceptional iron content. All three produce a more nutritious sadza than commercial white maize meal.

How do I make sadza with heritage grain mealie meal?

Bring salted water to the boil. Whisk in the mealie meal gradually to avoid lumps — do not add it all at once. Stir continuously on medium heat for 8–12 minutes until the sadza is thick and pulls cleanly from the pot. Cover and rest 3 minutes before serving. Heritage grain mealie meals may need slightly longer cooking than commercial white maize meal.

Can I use heritage grain mealie meal for porridge?

Yes — and it makes a far more nutritious porridge than white maize meal. Use a ratio of 1 part mealie meal to 5 parts water for a smooth porridge. Sweeten with honey or serve with milk. Finger Millet porridge in particular is traditional and deeply filling.

Is the traditional Zimbabwean rice different from supermarket rice?

Yes. Our Lowveld rice is grown in the Chiredzi basin, Zimbabwe's primary rice-growing region. It is a long-grain variety with a slightly floral fragrance and a firm, separate texture when cooked correctly. Unlike imported supermarket rice it carries the mineral profile of Zimbabwean soil — and it has not been waxed, coated or pre-processed in any way.

Method

  1. Soak: For best results, soak 1 cup of rice in cold water for 30 minutes before cooking, then rinse.
  2. Ratio: Add 2.5 cups of salted water for every 1 cup of rice.
  3. Bring to the boil: Cover tightly and simmer on low heat for 30 minutes.
  4. The Tradition: When the water is almost gone, stir in two tablespoons of peanut butter. Cover and let it simmer for another 5 minutes. Rest for 10 minutes before serving.

What is the difference between Finger Millet, sorghum and pearl millet?

All three are ancient African grains grown in Zimbabwe long before white maize became dominant. Rapoko (finger millet) has the highest calcium of any grain and a dark, nutty flavour. Sorghum (mapfunde) is lighter, naturally gluten-free and very high in antioxidants. Pearl millet (mhunga) has the highest protein of the three and exceptional iron content. All three produce a more nutritious sadza than commercial white maize meal.

How do I make sadza with heritage grain mealie meal?

Bring water to the boil. Whisk in the mealie meal gradually to avoid lumps — do not add it all at once. Stir continuously on medium heat for 8–12 minutes until the sadza is thick and pulls cleanly from the pot. Cover and rest 3 minutes before serving. Heritage grain mealie meals may need slightly longer cooking than commercial white maize meal.

Can I use heritage grain mealie meal for porridge?

Yes — and it makes a far more nutritious porridge than white maize meal. Use a ratio of 1 part mealie meal to 5 parts water for a smooth porridge. Sweeten with honey or serve with milk. Finger Millet porridge in particular is traditional and deeply filling.

Is the traditional Zimbabwean rice different from supermarket rice?

Completely different. This is African highland wetland rice — mupunga weMatoro — grown in the dambos and seasonally waterlogged vleis of Manicaland's Eastern Highlands or other areas of Zimbabwe . It has been cultivated this way for centuries, long before commercial rice arrived in Zimbabwe. It has a firm, slightly nutty character and carries the mineral profile of highland Zimbabwean soil. Unlike supermarket rice it has not been washed, coated, polished or pre-processed in any way. The surface starch is intact. That is what gives it its texture and character when cooked.
